Tomorrow I have to attend another meeting at work, one of my least favorite things. My coping strategy is to provide snacks so that everyone will feel better when they arrive and have something to do in the slow moments. I made the oh-so-gourmet decision to fix spinach dip (mostly because I had a box of crackers and a packet of the soup mix in the pantry) and the cookies my great-grandmother used to show up with at every holiday. A little pseudo-healthy balanced out with some comfort food from my childhood. There you have it, the secret to a perfect meeting.
This recipe is one that I assumed fell into the "old family secret" category. After my great-grandmother passed away I asked my grandmother for the recipe. Imagine my surprise when I found out what was really in one of my favorite childhood treats!
Texas Blondies
oven 375 bake for 20-25 min.
grease and flour a cookie sheet with sides
mix well:
2c. brown sugar
4 eggs
2 c. regular Bisquick (not lowfat)
1 t. vanilla
1 c. butterscotch chips
1c. chopped walnuts or pecans
Spread onto the prepared baking sheet, the dough will be spread very thin. Bake and then cut while still slightly warm. Excellent with a glass of milk!
